5 prickly pears, any color will do!
1/2 lime, zested and juiced
Blend all ingredients in a blender until pureed. The prickly pear seeds are quite big and hard so those won’t break up. Strain the mixture through a fine-mesh strainer. You’re going to want to use sweet, ripe fruits – but if the syrup lacks sweetness you can add a little agave or honey to your liking.
This syrup is great in combination with sparkling water, in a cocktail, or even as the base for a glaze in cooking.
