Everything Salsa Verde
You’re going to want to ladle this punchy salsa verde over all your dishes! It’s full of flavor and good-for-you ingredients that’ll bring life into any meal.
Ingredients
- 3 tablespoons capers
- 5 cups herbs, parsley, cilantro, dill, basil, carrot tops
- 1/4 cup walnuts or pecans, chopped
- 2 garlic cloves
- 1 lemon, zested
- 1 teaspoon dijon mustard
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/4-1/2 cup olive oil
Instructions
- Chop the herbs (you can mix all the herbs above in varying quantities or use one cup each) and the nuts. Mince the garlic and capers. Add these ingredients to a bowl.
- Zest one lemon and squeeze all the juice into the bowl along with the lemon zest. Add the salt, pepper, and olive oil and combine well. Taste and adjust seasoning to personal preference.
Notes
- I like to use a range of herbs for the salsa verde because it adds complexity to it, but you can easily use just one or a few out of the bunch.
