Healthy Nut Butter Date Bites


These Healthy Chocolate Covered Nut Butter Date Bites are the perfect snack for when you’re craving something sweet. Reminiscent of a gooey snickers bar, these will rock your world! They are entirely sugar-free (other than the naturally occurring sugars in dates), vegan, and an all-around easy, healthy treat. Enjoy!

Ingredients

  • 12 soft dates
  • 12 teaspoons peanut butter, or any other nut butter
  • 1/8 cup cacao butter
  • 1/4 cup cacao powder
  • 1 teaspoon vanilla
  • pinch of sea salt

Instructions

  1. First, pit the dates and press your finger into the gap to form a ‘pocket’. Add a teaspoon, or more depending on the size of your dates, of any nut butter you wish. I recommend peanut butter, almond butter, or sun butter, but anything will do! Once all the dates have been filled transfer them to the freezer to harden.
  2. Meanwhile, make the chocolate drizzle or coating (depending on how much chocolate you want to have on these bad boys). Start by melting the cacao butter in a microwave safe bowl at high in 30 second increments, stirring in between, until it’s melted. You can also do this in a pan on a stove top. Once melted, mix in the cacao powder a tablespoon at a time. Once fully incorporated add the vanilla and sea salt.
  3. This chocolate ‘sauce’ will harden once you drizzle it over your Nut Butter Date Bites. So coat as you wish!

Notes

  • If you’d like to fully coat the dates rather than drizzle them then I recommend upping the cacao butter to a 1/4 cup and the cacao powder to 1/2 cup. You can always turn the leftovers into small homemade chocolates(in that case you might want to add a bit of sweetener to it)!
  • You can always skip the chocolate making steps and just buy ready made dark chocolate, which you can then melt just like the cacao butter.
  • You can add more texture to these by adding some peanuts or other nuts/seeds on top of the peanut butter before putting the bites into the fridge to harden.
