


Vegan Sour Cream
This creamy, tangy Vegan Sour Cream is a perfect addition to loaded nachos, burritos, soups, and much more!
Ingredients
- 1/2 cup cashews, soaked for at least 4 hours
- 1/4 cup almond milk
- 2 teaspoons apple cider vinegar
- 1 1/2 teaspoons lemon juice
- 1/4 teaspoon mustard
- 1/4 teaspoon nutritional yeast
- 1/4-1/2 teaspoon salt
Instructions
- Add all ingredients to a blender and blend until completely smooth and creamy. I suggest starting with 1/4 teaspoon salt and moving up from there.
Notes
- Add a dollop of this sour cream atop my Green Pea Soup, Spiced Amaranth Potato Patties, or instead of the salted coconut cream in this Roasted Sweet Potato recipe.
