Pantry Chunky Monkey Clusters


These Pantry Chunky Monkey Clusters are a mess of peanut butter, chocolate, and banana chips to make a grain-free take on pimped Rice Krispie treats. Feel free to add in nuts, crunchy cereal, or homemade granola to up the crunch factor.

Ingredients

  • 1/3 cup peanut butter
  • 3 tablespoons coconut oil
  • 1 tablespoon rice syrup, agave, maple syrup, or another sweetener 
  • 1 teaspoon vanilla extract
  • a hefty pinch of cinnamon
  • 1/4 cup pure dark chocolate
  • 1/2 cup dried banana chips
  • 1/2 cup granola, cereal, nuts, or seeds

    Instructions

    1. First, melt the coconut oil, peanut butter, sweetener, vanilla extract, and cinnamon in a saucepan. Pour into a mixing bowl. 
    2. Melt the chocolate in the same pan.
    3. Add the dry ingredients to the peanut butter mixture and combine well so that every nook of the bananas are covered. Pour a little bit of the melted chocolate over it and without stirring, use a spoon or cookie scoop to spoon the mixture onto a parchment-lined tray or plate. I made 6 cookies, but you can make them smaller if you want more or feeding little ones. Drizzle the remaining chocolate over the cookies and transfer to the freezer to harden. After about an hour they’ll be ready to eat! 

    Notes

    • These clusters need to be kept in the freezer, I haven’t had an issue with them being too hard straight out of the freezer, but if you do then let them thaw for a minute or two before eating.
