Spiced Tomato Jam
Sweet, tangy tomato jam that you’re going to want use on everything! It can be used as a spread on bread (think bruschetta), a dip, or a condiment to compliment your dinner dishes!
Ingredients
- 1/2 tablespoon olive oil
- 10 garlic cloves, bruised
- 2 pints cherry tomatoes
- 2 tablespoons apple cider vinegar
- 3 tablespoons – 1/4 cup agave syrup
- large thumb of ginger, in big chunks (to fish out later)
- 1/4 teaspoon salt, more to taste
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 – 1/2 teaspoon cayenne
- 1/4 teaspoon cinnamon
- 5 cloves
Instructions
- Add the bruised garlic and olive oil to a deep pan and fry until slightly browned.
- Add the rest of the ingredients and simmer on medium heat until reduced to a glossy, jam-like consistency. This can take anywhere between 2-4 hours depending on the water content in your tomatoes.
- I highly recommend tasting along the way to find the balance of spices and sweetness that works for you!
- Let cool and transfer to sterilised jars to keep for up to two weeks in the fridge.
Notes
- I used cherry tomatoes because I had a surplus of them and I love the sweetness it brings but you can definitely use regular tomatoes.
