Immunity Boosting Greens Broth
This Immunity Boosting Greens Broth is a clean, fresh vegetable broth which is great for when you’re feeling under the weather. It’s a light, flavourful broth that can be enjoyed both hot or cold. It can also be used as an addition to a dish – take for example this ‘Tuna’ Avocado Tartare
Ingredients
Basic Vegetable Broth:
- 6 celery stalks
- 500 grams carrots
- 1 leek, white part only
- 3 large onions
- 8 garlic cloves
- 1 bunch of parsley
- 2 sprigs of fresh thyme, or 1 teaspoon dried
- 2 bay leaves
- 17 peppercorns
- 1/2 teaspoon all spice
- 1 teaspoon nutritional yeast
- 1-3 teaspoons salt
Greens Broth:
- Basic Vegetable Broth
- handful of chives
- handful of parsley
- handful of spinach, or other greens
Instructions
- To make the Basic Vegetable Broth, roughly chop all the ingredients (except for the herbs and spices) and add to a big, deep pan. Add the herbs and spices. Fill the pan with water until all the vegetables are fully submerged in water. Bring to a boil and immediately turn down the heat and allow to simmer for at least 1.5 – 4 hours.
- After the broth is ready, strain the vegetables, herbs, and spices and put aside. Some of these ingredients can still be used – I usually use the leftover carrots to make a spiced carrot puree on another day. Your broth is now ready.
- Transfer about 4 cups worth of broth to a blender (save the rest for future cooking), add the greens, and blend! Your Immunity Boosting Greens Broth is now ready to be used. Depending on your preference, you might want to skim the foam off the top after blending for more of a ‘consommé’ style broth. It’s great served hot or cold, a squeeze of lemon juice is always welcome!
Notes
- This a very flexible recipe so you can add whichever greens you have on hand and play around with them. I’m sure blending in basil, watercress, or cilantro at the end would work well as well!
- You’ll be left with a lot of Basic Vegetable Broth which you can freeze or refrigerate for future use.
