These simple, uber-healthy cookies are a great snack to have with you when you’re out and about. They’re filling, mildly sweet, and loaded with all kinds of healthy fats.
1 cup almonds, or any other nuts
1 cup cashews, or any other nuts
1 cup buckwheat flour
1 cup medjoul dates, pitted
1/4 cup chia seeds
1/4 cup almond milk
1 tablespoon vanilla
1 tablespoon olive oil
Pinch of salt
Preheat oven to 180°C.
Add the nuts to a food processor or blender and blend until it forms a meal, add the rest of the ingredients and blend until throughly combined into a thick dough. Using a cookie scoop or your hands form equal balls and flatten into disks. I made jumbo cookies so ended up with 6 in total.
Bake for 10-20 minutes depending on how chewy or crispy you like them!
Optionally you can add dried fruit or chocolate chips, after the dough is ready, to add some flair.
If you’re looking for a sweeter cookie you can add up to 1/2 cup more dates.
